Welcome back to my blog where I post every Sunday! For today’s blog post, Andrew and I decided to try a new recipe from the “Tasty” cookbook. Last weekend I posted an Instagram poll asking if we should cook the “Rainbow pizza” or the “Zucchini meatballs”. The zucchini meatballs ended up winning by a lot. I kind of wanted to make the pizza but spoiler, the zucchini meatballs were so good. The recipe overall was so simple and was only 4 easy steps. We did change the recipe a bit based on what we had so hoped you enjoy 🙂
You want to grate all your zucchinis. You want the zucchinis to sit for a bit to release excess moisture. Once the zucchinis are ready to go you can put them into a bowl. You want to sprinkle it with salt once you have grated all the zucchinis. You then want to add some chopped up onion, parsley, garlic, corn oil, pepper and Italian seasoning. The original recipe said to use vegetable oil and basil but we didn’t have either. You then want to mix it all really well.
Start rolling the stuff in the bowl into a ball shape. We made ours fairly large but we recommend a small to medium size. Once you are done put them in the oven at 375 degrees for 30-40 mins.
While your “Meat” balls are in the oven you can start the pasta (I think pasta is pretty self-explanatory so I don’t think I need to explain it).
And you’re done! When the “Meat” balls are nice a crispy you can serve them with your pasta! How easy is that?
