Green peas pesto pasta recipe

Hello everyone!

Welcome to or back to my blog. It’s been a crazy few weeks and I have been so busy, however, that being said, I am back and have a lot of stuff in the works. Today I did another cooking video that is up on my youtube channel but decided to write a blog post more about the cooking process (even though the recipe is so simple, but thought I’d share).

Tonight my good friend Emma and I decided to cook from the Lauren Toyota Vegan cookbook. We decided to make a green pea pesto pasta and spoiler alert it turned out so delicious! I hope you enjoy this very simple yet tasty recipe! This weekend Andrew and I are leaving on a little weekend getaway so a new blog post on that will be up sometime next week!

What you’ll need

-Any type of pasta

-2 or more cloves of garlic

-Lemon juice

-Olive oil

-Vegan cheese

Step 1: Boil your water and cook the pasta while you begin prepping everything else (since this recipe is so easy and quick)

Step 2: Once your pasta is cooked, add peas!

Step 3: In a food processor, add a quarter cup olive oil, a quarter cup lemon juice, 1 teaspoon of salt, 2 cups of peas, 2 cloves of garlic (we used three though) and the recipe called for 1/2 cup of parm but we used vegan cheddar cheese. The recipe also called for basil but we didn’t have basil. Once all the ingredients are in the processor, mix till it’s smooth but also textured.

Step 4: In the original recipe they only said to mix some of the sauce and then add it on top but we mixed all the sauce just so it was more flavourful.

and there you have it. It was honestly such an easy and simple recipe and it tasted so good. I highly recommend this recipe.
